We’ve announced which Oregon-based chefs and national chefs will be cooking at the Sagebrush Feast; now it’s time to reveal which three chefs will be crossing oceans to get to the Sagebrush Feast.
Ngo Hoang Viet
Moevenpick Saigon Hotel, Ho Chi Minh City, Vietnam
Chef Nigel loves to create many kinds of innovative dishes with different flavors and ingredients. With the nickname of “Viet”, He has 20 years experience working in many restaurants and hotels, including Omni, Legend, Caravelle and Sheraton. A winner of numerous culinary awards, his acclaim stretches from Vietnam, through Asia and to the West. He has also been a chef ambassador for Vietnam.
Currently he cooks for Moevenpick Saigon Hotel Group, a 5 Star Hotel, as acting executive chef. He is in charge of many outlets, included the IKI Japanese gourmet, Lotus Court Chinese Cuisine and Café Saigon Restaurant, as well as executing ballroom function of 400 guests.
Jackie Lau
Roy’s Restaurant, Honolulu, Hawaii
Okay, technically Jackie is a national chef, but we decided to include her with the international chefs because she has to fly across the Pacific to reach Bend.
Jackie Lau has spent her entire culinary career working for Roy’s Restaurants across the Pacific, spending most of her time at their Honolulu location and as opening chef for Roy’s Restaurants in Tokyo, Guam, Maui and on the continental U.S.
Jackie has participated in many outstanding culinary events across the country and abroad, including events for the Hawaii Visitors and Convention Bureau, Aspen Food and Wine Festival, The James Beard House and the The World Gourmet Summit. Jackie has been featured in several television series, including the Great Chef series (Great Chefs of Hawaii and Great Chefs of the World), Hawaii Cooks with Roy Yamaguchi and Island Chefs. She has also been recognized in the Hawaii Business News as one of the leading female chefs in Hawaii.
Rusnidar “Rosi” Nazaruddin
The Oyster Bar, Bangkok, Thailand
And now, announcing a new international chef to the Sagebrush Feast, Rosi Nazaruddin! We hope that Rosi enjoys being a part of the Sagebrush Feast and gets the opportunity to do a little site seeing in Central Oregon.
Rosi has worked in hotels in Kuwait and at The Grand Hyatt in Jakarta and has been the executive chef at the Oyster Bar Bangkok for three years. She is an accomplished seafood chef, and has worked under such notable chefs as Mark Miller, Kelly Mullarney and James Reppuhn during her tenure at The Oyster Bar. With Bill Marinelli she assisted in opening up the first oyster bar in Indonesia, The Oyster Bar Kemang in Jakarta before moving to Bangkok. Her food is product driven, relying on the freshest organic product and the highest quality seafood. She has been noted as an up-and-coming chef in the Thailand Tattler and has received numerous accolades for her simple, yet tasty seafood preparation.
